Strawberry breakfast tarts, a gluten- and lactose free breakfast with oatmeal and fruit. You can also make these tarts the night before, than you only have to cover them with fresh fruit the next morning.
With this Autumn kind of weather I believe it is time for a Summery breakfast. We can’t complain of course, because we had an awesome Summer, but I honestly have to admit that I have some difficulty getting used to these dark, rainy and cold days again. The advantage of these kind of days is that you can see sudden beautiful rainbows. This morning I was walking our dog and suddenly right in front of me I saw an amazingly clear rainbow, which I can really enjoy. Even though the weather was not that good I still had a really nice weekend.
Yesterday afternoon I went to have a drink with my colleagues. One of my colleagues had left and as a goodbye we had a drink in the city. And of course we had a tapas plate which I had looked forward to all week. But we ate it so quickly that we had to order other things and we picked warm nachos from the oven which are my favorite! And besides the good food we also had an amazing time and a lot of fun. I didn’t really look forward to it, because I was tired after a week of working and preferred some rest but we had a lot of fun. And the advantage of starting on time is also ending on time. Since Jens had to work I also had to be home on time for Leyla. So at around 7.30 I arrived back home and made myself a nice soup. Today will be a relaxed day, I will be working on my blog and have some ideas for the news letter that I want to figure out and work on. And tonight Jens and I are going to Imagine Dragons and I am really looking forward to it! It has been a while since we did something fun together (really together without Leyla as well) and I had given him the tickets for his birthday because he is a real Imagine Dragons fan and we are both looking forward to it a lot.
I am guessing tomorrow will be a relaxing day. After such a concert with that many impressions, impulses and people around me I usually need a day to recover haha. So that will be a lazy Sunday. And than the weekend is already over again, but next weekend I planned a lovely long weekend of 4 days which is kind of a mini Holiday that I am looking forward to already.
And to still celebrate the Summer I made these lovely breakfast tarts. Will you be trying them this weekend?
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Mash the banana with a fork and make sure there are no hard pieces left. I did it in the food processor which also works perfectly.
Add the oatmeal, honey and the cinnamon to it and mix into a firm mixture. You can use a fork (in a mixing bowl) or the food processor/mixer.
Grease the molds with a bit of coconut oil or butter and put approximately one table spoon of the mixture in every mold. Press firmly and make sure the bottom is flat and the edges are a bit up. That way you have enough space to fill the molds with the yogurt and fruit. Also pay attention the bottom does not have cracks or holes.
Bake the tarts for approximately 30 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
Let the tarts cool down (that can take about 30 minutes). Next you can cover them. I used coconut yogurt, strawberries and cashews to do so, but you can vary with whatever you like. Enjoy!
